Should You Buy Frozen Seafood ?

In Asian households, getting good quality meat and seafood for the family has always been a priority – and for many people, frozen seafood carries the perception of being sub-par compared to their non-frozen, chilled counterparts.

Understandably, this perception stems from the poor freezing techniques of old. This is further contributed by many poor quality frozen seafood products that were in the market for years and years before.

Today, however, with modern freezing techniques, there is even a chance that frozen seafood is better than chilled seafood! While it may seem illogical, there are many reasons why this is the case for most of the seafood you eat today. In fact, many restaurants today rely on frozen seafood instead of fresh seafood to serve their hungry customers!

How is frozen seafood as good as or even better than chilled seafood?

With modern freezing techniques, it has become possible that plenty of the seafood in the freezer section is potentially superior to those in the chilled section nearby.

This is due to the fact that the vast majority of seafood that is supplied to markets and supermarkets today is frozen directly on the boat itself merely minutes after being caught!

If you think it’s merely just throwing the seafood in to cases of ice, think again – flash-freezing units are capable of maintaining temperatures far below the usual freezer you have at home. Furthermore, farm-raised seafood is frozen immediately upon harvest as well as most producers have their own flash-freezing capability.

Chilled seafood, on the other hand, might be sitting in cold but not cold-enough temperatures for hours, or even days on end before finally reaching you.

One important thing to note is that most of the seafood we eat today are frozen before they are transported and sold to our seafood markets or supermarkets. Hence, if their stores are labelling their seafood as fresh or non-frozen, it might be misleading to their customers.

Today, freshness can really be frozen into the seafood

One fantastic thing about frozen seafood is that you really won’t be able to tell the difference most of the time! Many chefs and experts out there agree that if applied correctly, flash-freezing seafood doesn’t negatively affect the seafood’s freshness whatsoever.

It’s widely known that when a seafood is caught, handled well and flash-frozen immediately, you can stop the ticking clock of the freshness, and more importantly, the nutrition of the seafood.

Also, the common belief that fatty seafood including tuna and salmon retains their texture and nutrition better when frozen is simply untrue – with proper freezing methods from the fishermen and the proper thawing method from the customer, frozen seafood can be just as good as fresh seafood!

Of course, this will depend on three key criteria of how the seafood is frozen in the first place. Firstly, the seafood must be frozen as soon as they’re caught on fishing boats. Secondly, the seafood must remain at a frozen state in a stable and low temperature for the entire duration of its period leading to thawing without any form of temperature interruption. Lastly, the thawing of the seafood itself must take place right before it is displayed for sale to customers.

With these conditions, the quality of seafood remains in top condition even 10 days after thawing – they’re free from bacteria with top consistency in texture, consistency and colour. On the nutrition factor, frozen seafood is also just as nutritious as chilled or even fresh seafood!

Of course, you should also pay attention and examine your seafood to ensure that it’s up to standards – no foul smells, no mush textures and no ice burns to indicate that you’re holding a piece of good quality frozen seafood!

How to prepare and cook frozen seafood the right way

This is much simpler than it sounds – just thaw it slowly and cook it as if it’s a piece of fresh seafood!

For an easier method of thawing, you can simply place your frozen seafood in the fridge’s non-freezer section for 24 hours before you’ll be cooking your seafood. Do be cautious that there might be liquid that will seep as the seafood thaws, so don’t forget to place it in another bag or container to prevent messiness and unpleasant smells!

If you forgot to thaw your frozen seafood, no worries – you can quickly thaw it in cool water. Alternatively, you can utilize the handy microwave to thaw it quickly – just make sure not to overdo it and cook the seafood instead!
